Sweet Pickles

1 gallon sliced cucumbers
2 Cups lime
Mix the lime with 2 gallons of water and pour over cucumber slices in a stone churn or enamel boiler. Cover and soak overnight.
The next morning, pour water off cucumber slices and wash good.
Now, put the cucumber slices in 2 gallons of ice water with 2 Tablespoons alum. Let them soak for 3 hours. Drain well.

Brine
4 pints vinegar
5 pounds sugar
2 Tablespoons salt
2 Tablespoons pickleing spice(you can tie this in a small bag to keep from floating in pickles)
Put this in a large pot with cucumber slices. Simmer for 1 hour. Pack in hot jars and cover with brine. Seal with hot lids and rings.
Makes 8-10 pints
