Easy Asparagus Gratin


  • 1/2 tablespoons olive oil
  •  salt and pepper, to taste
  • 1 pound slender asparagus, ends trimmed
  • 1/4 cup Parmesan cheese, grated
  •  juice of 1/2 a lemon
Instructions
  1. Preheat oven to 450 degrees F.
     
  2. Pour oil into an oval gratin or other shallow baking dish and add some salt and pepper.
     
  3. Add asparagus, turning it to coat with oil.
     
  4. Bake until asparagus is tender and beginning to brown at the edges, 12 to 15 minutes. Sprinkle with cheese and squeeze lemon juice over.

Cheese, Potatoes and Pork Chop Casserole


6 boneless pork chops
3 large potatoes, thinly sliced
1-10 oz can condensed French Onion Soup
1-10 oz can condensed Cheddar Cheese Soup

Preheat oven to 350*F.  Spray a 9"x13" baking dish with cooking spray.  Layer potatoes in baking dish then layer in pork chops, stir together soups and pour over pork chops as evenly as possible.  Bake for about 1 hour.

Cracker Barrel’s Hash Browns Casserole – Copycat Recipe

2 lbs frozen hash browns

1/2 cup margarine or 1/2 cup butter, melted

1 (10 1/4 ounce) can cream of chicken soup

1 pint sour cream

1/2 cup onion, peeled and chopped

2 cups cheddar cheese, grated

1 teaspoon salt

1/4 teaspoon pepper

Directions

1. Preheat oven to 350°F and spray an 11 x 14 baking dish with cooking spray.

2. Mix the above ingredients together, separate the cheese so you have enough left to garnish the top. Place in prepared pan and bake for 45 minutes; remove from the oven and garnish the top with the remaining cheese. Then place back in the oven and bake until brown on top.
