Oven Fried Green Tomatoes


Oven Fried Green Tomatoes

4 Green tomatoes, sliced
½ stick butter, ¼ cup
1 tsp salt
1 tsp black pepper
1 cup flour or corn meal
1 tsp baking powder, heaping


Preheat oven to 400 degrees F. Melt butter in a baking pan. Stir in salt and pepper. Coat sliced tomatoes with flour and place in baking pan. Bake on lower rack of oven for 8 minutes. Turn oven up to broil in order to brown tomato slices. Serves about 6

1 CAN  WHOLE KERNEL CORN , 15 - 1/4 oz. ( DON'T DRAIN )

1 STICK  BUTTER ( MELT )
 
1  - 8 OZ.  SOUR  CREAM
 
1 MEDIUM ONION, CHOPPED
 
1 BELL PEPPER, CHOPPED
 
2 EGGS
 
1 BOX  JIFFY CORN BREAD MIX

MIX  ALL  INGREDIENTS  TOGETHER . SPRAY PAM IN  9x13 PYREX DISH.
 
BAKE PREHEATED OVEN 350 DEGREES  FOR 45 MINUTES  OR UNTIL FIRM.
 
LEFTOVERS ARE GOOD  !!

Mashed Potato Muffins


Just mash potatoes plain with butter or you can add yummy ingredients like cooked bacon, cheese, parsley, green onion, garlic, etc. Stuff in to a greased muffin tin, run a fork along the top and brush with melted butter or olive oil. Bake at 375 degrees or until tops are crispy and golden.

Yes we still need carbs in our diet even when we are trying to lose weight so this is a great way to stick with portion control!!!

Also remember there are varying sizes in muffin pans so you can choose the serving size!! Using mini muffin tins you can turn this into a healthy alternative to chips or wedges too. You still get the soft potato centre with the crunch on the outside without all the fat!!!!a

Velveeta Down-Home Macaroni & Cheese


This is a delicious dish and really easy to make.  It is also an often requested dish whether it's potluck or family dinner!

cup  butter or margarine, divided
1/4
cup  flour
1
cup  milk
1/2
lb.  (8 oz.) VELVEETA®, cut into 1/2-inch cubes
2
cups  elbow macaroni, cooked
1/2
cup  KRAFT Shredded Cheddar Cheese
6
 RITZ Crackers, crushed (about 1/4 cup)

HEAT oven to 350°F.
MELT 3 Tbsp. butter in medium saucepan on medium heat. Whisk in flour; cook 2 min., stirring constantly. Gradually stir in milk. Bring to boil; cook and stir 3 to 5 min. or until thickened. Add VELVEETA; cook 3 min. or until melted, stirring frequently. Stir in macaroni.
SPOON into 2-qt. casserole sprayed with cooking spray; sprinkle with Cheddar. Melt remaining butter; toss with cracker crumbs. Sprinkle over casserole.
BAKE 20 min. or until heated through.
