The Best Ever Apple Turnover!

8 oz cream cheese
3/4 cup butter
1 egg, separated
3 TB cold water, divided
2 Cups flour
7 Cups of apples
3/4 cup brown sugar
1 1/2 tsp. cinnamon

Mix together cream cheese and butter. Refrigerate egg white, mix in the egg yolk and 2 TB of water to the cheese and butter mixture.  Gradually add the flour.  Refrigerate the dough for one hour.

While the dough is chilling, prepare the apples by tossing the apples with sugar and cinnamon in a heavy skillet. Bring to a boil and reduce heat, cover and simmer 10-20 minutes.  Remove from heat to cool.

Turn pastry dough onto a lightly floured surface and roll the dough to 1/8 in thickness.  Cut into squares. Fill with fruit mixture. About 1/2 cup cooked fruit mixture per square.  Fold pastry over and seal the edges with a fork.  Whisk together 1 TB water and egg white, and brush over the pastry.  Bake at 375 degrees for 18 -22 minutes or until lightly browned. Remove from oven and add a dollop of ice cream, whipped cream or a slice of good cheddar cheese!  Enjoy!
