Raisin Bran Muffins

Ingredients
  • 1 1/4 C flour
  • 1/2 C raw or white sugar
  • 1/2 t salt
  • 1 T baking powder
  • 3 C raisin bran cereal
  • 1 1/4 C milk
  • 1 egg
  • 1/4 C vegetable oil
  • 2 T raw or crystal sugar
  • 1 t cinnamon
Instructions
  1. Heat oven to 350 degrees F.
  2. In a large bowl, place the milk and cereal. Mix to coat. Set aside.
  3. In a small bowl, mix the flour, 1/2 cup of sugar, salt, and baking powder. Set aside.
  4. Add the egg and oil to the wet cereal. Mix well.
  5. Add the dry ingredients to the wet cereal mixture. Stir until completely incorporated and wet.
  6. Fill paper lined muffin tins 2/3 full.
  7. Mix the remaining sugar and cinnamon. Sprinkle over the tops of the muffins.
  8. Bake for 25 minutes or until a toothpick in the center comes out clean.
  9. Serve with milk or your favorite breakfast beverage.

These are awesome!!!  You have got to try them!
*WARNING: They taste like a donut. Be prepared for euphoria.
(makes 12)
  • 1-¾ cup flour
  • 1-½ teaspoon baking powder
  • ½ teaspoon salt
  • ½ teaspoon nutmeg
  • ½ teaspoon cinnamon
  • ⅓ cup oil
  • ¾ cup granulated sugar
  • 1 egg
  • ¾ cup milk
For the Cinnamon Sugar Topping:
  • 1/4 cup butter, melted
  • 1/3 cup granulated sugar
  • 1 Tablespoon cinnamon
Preheat the oven to 350ยบ. Whisk together the flour, baking powder, salt, nutmeg, and cinnamon.
In a separate, large bowl, combine oil, sugar, egg and milk.
Add dry ingredients and stir only to combine.
Coat your muffin pan well with nonstick cooking spray and divide the batter evenly among the cups.
Bake at 350 degrees for 15-20 minutes.
Run a knife around the sides of the muffin and shake them out of the pan while still hot.
Melt the butter in a bowl.
Combine the white sugar with the cinnamon in another bowl.
Dip muffins in butter, then into the sugar/cinnamon mix. Let cool. Eat immediately.
