Ingredients
- 1 1/4 C flour
- 1/2 C raw or white sugar
- 1/2 t salt
- 1 T baking powder
- 3 C raisin bran cereal
- 1 1/4 C milk
- 1 egg
- 1/4 C vegetable oil
- 2 T raw or crystal sugar
- 1 t cinnamon
Instructions
- Heat oven to 350 degrees F.
- In a large bowl, place the milk and cereal. Mix to coat. Set aside.
- In a small bowl, mix the flour, 1/2 cup of sugar, salt, and baking powder. Set aside.
- Add the egg and oil to the wet cereal. Mix well.
- Add the dry ingredients to the wet cereal mixture. Stir until completely incorporated and wet.
- Fill paper lined muffin tins 2/3 full.
- Mix the remaining sugar and cinnamon. Sprinkle over the tops of the muffins.
- Bake for 25 minutes or until a toothpick in the center comes out clean.
- Serve with milk or your favorite breakfast beverage.
